I know nothing about WikiTravel in particular, but if their work is
licensed under BY-SA, then there is no problem in any way for a
company to sell their work without compensating them.
However, that appears to me as a potential problem. If a group builds
up a corpus of knowledge, I see no conflict with the aims of the Free
Culture movement if they decided to require a publisher to pay them in
order to print their material and sell it. One could rely on the
philanthropy of the publisher to, as you say, fund future development
of the original wiki; but if a group decides to attach a NonCommercial
stipulation, I fail to see the problem.
